Day 11 of 25 Days – Oatmeal Scotchies

I have been really craving butterscotch lately (no, I’m not pregnant).  It’s just been sounding really tasty.  So I bought a bag of Nestle Hershey Butterscotch Chips and this recipe was on the back, so I thought what the heck, give ’em a try and see if they can convert to a good Gluten Free version.  I think they turned out pretty good and they satisfied my butterscotch craving.

Oatmeal Scotchies

1-1/4 cups All-purpose GF Flour (I used Jules Gluten Free)
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup butter
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
3 cups Oats (I used Jules Gluten Free Oats)
1-2/3 cups NESTLE HERSHEY Butterscotch Flavored Chips

***UPDATE – NESTLE Butterscotch chips are NOT gluten free – please use another brand of butterscotch chips when making this recipe.***

**recipe was modified from the Nestle Butterscotch Morsels bag, but DO NOT use these chips for your cookies, the recipe will still work, just use different chips**

    • Wow, I didn’t know that – thank you. I just looked it up myself. My apologies, I will repost with “Hershey” instead (which says they are GF).
