Day 13 of 25 Days – Oatmeal Chocolate Chip Pecan Cookies

Oatmeal cookies are those cookies that mom used to make for you when you’d come home from school and they’d be hot and fresh waiting for you with a tall glass of milk.  And if she made them in the late fall, early winter it was even better.  Well here’s my version of mom’s oatmeal fall/winter cookies.

Oatmeal Chocolate Chip Pecan Cookies

Ingredients:¾ cup butter softened
1-3/4 cups all-purpose flour (I used Jules Gluten Free)
1 cup packed brown sugar
½ cup sugar
1 egg
1 teaspoon baking powder
1 teaspoon vanilla
¼ teaspoon baking soda
2 cups rolled oats
1 cup semisweet chocolate chips
½ cup chopped pecans

Directions:In a mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds.  Add about half of the flour, the brown sugar, sugar, egg, baking powder, vanilla, and baking soda.  Beat until thoroughly combined.  Beat in remaining flour.  Stir in oats, then chocolate chips and pecans.
Drop by rounded teaspoons 2 inches apart onto an ungreased cookie sheet.  Bake at 375° F for 10-12 minutes or until edges are golden brown.  Cool cookies on a wire rack.
