I couldn’t have imagined these cookies being a bigger hit in my office then these. There are exactly as the name say’s “brown sugar” cookies. But there is a hint of some nutmeg, ginger and cinnamon so when it’s all combined makes for a nice combination. And the texture is just the way you expect a sugar cookie to be; soft and chewy.
1-1/2 sticks unsalted butter, room tempurature
1-1/4 cups dark brown sugar
1 large egg at room tempurature
2 cups of GF all-purpose flour
2 teaspoons baking soda
1/2 teaspoon kosher salt
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1. Preheat oven to375 F. Place the butter and sugar in the bowl of a mixer fitted with a paddle and beat until smooth and creamy. Add the egg and beat well. Scrape down the sides of the bowl. Place the flour, baking soda, salt, and spices in a separate bowl and mix well. Add to the butter mixture and beat until everything is well incorporated. Scrape down the sides of the bowl and beat again.
2. Drop a large teaspoonful of dough onto an ungreased cookie sheet about 2 inces apart and bake until the edges are slightly browned about 8 minutes. If you like your cookies crispier, let them cool on the cookie sheet. Let the cookie sheet cool completely between batches and repeat with reamining dough.
Makes about 4 dozen cookies
