Day 3 of 25 – Sugar Cookies

Here is another family cookie recipe that I love to make.  Sugar cookies are easy and can be cut out and decorated as much as you like.

1 cup shortening (can use part butter or margarine if you’d like)
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon  grated orange rind (optional)
1 tablespoon orange juice (optional)
3 cups flour – I used Bob’s Red Mill Flour
2 teaspoons baking powder
scant teaspoon salt
Cream together sugar, shortening and vanilla extract until light and fluffy. Add eggs until well beaten.  Sift together flour, baking power and salt and gradually add to sugar mixture.
Bake on greased cookie sheet at 325° F for 10-12 minutes. You can also use a Silpat mat or parchment paper in place of greasing the sheet.
Optionally you can roll into a long loaf and chill over night and then slice and bake.
If you choose to do cut and decorate sugar cookies; lightly flour your work surface, roll dough to 1/8 inch thick.  Cut out desired shapes with cutter.  If dough sticks to cutter, dip the cutter in a little flour right before cutting to help it from sticking.  Decorate and bake.
