Day 5 of 25 Days – Pecan Sandies

These are very yummy, melt in your mouth cookies.  I love the texture of finely chopped pecans in every bite.  And although it’s gluten free, it’s not taste free at all.
Pecan Sandies
*¾ cup butter
*½ cup brown sugar, packed
*1 teaspoon pure vanilla extract
*2 tablespoons vanilla yogurt
*1 large egg
*1 cup, Gluten Free Flour (I used Jules Gluten Free)
*(if you want the cookies to have more texture to them, then use ¾ cup of GF
flour and ¼ cup of rice flour)
*1 cup of pecans, finely chopped
*Cream the butter and brown sugar in a large bowl until light and fluffy.  Add the
vanilla, yogurt and egg, beating until light and thoroughly mixed.  Finally, mix
in the flour(s) and chopped pecans.
*Refrigerate dough until cold, at least 1-2 hours
*Preheat oven to 350
*Scoop tablespoons of the dough onto a parchment line baking sheet, flattening
the balls of dough slightly.  Add one whole pecan to the top of the dough. The
final product will look very much coming out of the oven as it did going in
*Bake for 10-12 minutes until cooked through and slightly browned on the sides
of the cookie (bake longer for crispier cookies)
*Cool for 5 minutes before removing from baking sheet.
