So I know that Thanksgiving is over, but if you are like me the green bean casserole is one of my favorites of the meal. And having it without those crispy french onions on the top, is just not the same. But, good news, my mom has a new way to make this dish just as yummy. Unfortunately, there are no crispy french onions on the top, but you can have crispy bacon instead.
Green Bean Casserole – A New Way

Green Bean Casserole
– 1 pound of Fresh Green Beans, ends clipped
– 4 slices of bacon, cut in half
– 2 tablespoons pine nuts
– 1/4 cup chopped white onion, make fairly large chunks
– 1/2 cup mushrooms
Boil Green Beans for approx 7-10 minutes depending on desired tenderness. While beans are boiling, cook bacon in pan for 3 minutes, add onions and mushrooms, cook until bacon is fully cooked and onions are clear. Once beans are fully cooked add them to the skillet and toss with mixture of bacon, onions and mushrooms. Fully coat beans and then toss in pine nuts, cook for a couple more minutes and serve.
