Crème Brulée French Toast w/Vanilla Cognac

This by far is the most perfect Sunday brunch ever.  Baked Crème Brulée French Toast with Vanilla Cognac added to it for a little extra something.  This would be a great breakfast treat for Mother’s Day or Easter Sunday or Christmas Morning.  It’s easy to make and can be made up to 24 hours before hand.

Chicken and Goat Cheese Enchiladas from Bites & Booze

YouTube has a new food-centric channel called HUNGRY and they just launched a new gluten-free cooking show called Bites & Booze: Gluten Free. They contacted me a few days ago and asked if I would be interested in showing a couple of the clips along with the recipes and I said “sure, a gluten-free cooking show – why not”!

Apple Cheesecake Bars with Caramel Crumb Topping

Whoever said that it turns to fall right after Labor Day obviously doesn’t live in California.  I mean seriously, what is up with this weather?  It’s 90 degrees today.  But I’m not letting that stop me from getting in the “fall” mood by making these AH-MAZING Carmel Apple Cheesecake Bars.  I found these while searching for something sinister to make to kick-off the fall season.  And boy oh boy were these it.  They are the perfect way to ease in to fall – now if the weather would only cooperate a little.

You will love these so much you won’t mind if it’s 90 degrees or 50 degrees, they taste great no matter what the temperature is outside.  Just make sure you have a BIG glass of milk to go with it.

Bacon Wrapped Dates w/Goat Cheese and Rosemary Almonds

There is this restaurant that I just love in Aliso Viejo, CA called Opah.  It’s kind of my “go to” place for good food and great lemon drop martini’s.  You say “hey let’s meet for drinks after work” and I say “Opah”! Usually when we go there we are in time for happy hour and it never fails that we’ll order their bacon wrapped dates. Hence this post was inspired.  I haven’t been to Opah in a few weeks so I was somewhat “jonesing” for these little morsels.

I decided to give my own twist to my favorite happy hour appetizer  bacon wrapped dates w/goat cheese and rosemary almonds.  It’s a mouthful I know, but so are these luscious flavored dates with a subtle taste of goat cheese and a crisp Marconi almond in the middle.  The drizzled with a balsamic vinegar reduction. Did I mention that the almond has rosemary and sea salt all over it too?!

Is your mouth-watering yet?

Bacon Wrapped Dates Stuffed with Goat Cheese and Rosemary Almonds

Did you know there is an International Bacon Day?  Yep, that’s right. How cool is that?  It’s the Saturday before Labor Day Monday. Click here for more info:  http://en.wikipedia.org/wiki/International_Bacon_Day.  This idea of an International Bacon Day was what spurred my interest to revive my love of these little goodies.

They take a little time, but they are well worth the effort.
